A good way to deal with Chaurus is the Kyne's Peace shout. All Chaurus in the area will cease hostile activity. You can then deal with them one at a time, beginning with a sneak hit for 3x (or more) damage. The Dark Brotherhood armor set (resist poison on the chest, and Backstab on the gloves) is ideal for this task.
